potato pizza


A thin layer of potatoes over cheese completely transforms this pizza. We have also had excellent results with using a prepared gluten free pizza base, available in health food orientated supermarkets. This is a crowd pleaser, gluten free or not. Pizza can be served warm or at room temperature. This also makes a great prepare ahead brunch dish.

  1. Pizza dough of choice or from our pizza dough/bread recipe
  2. 1 cup of grated cheese (or less depending on pizza base size). We have used a mix of medium or old cheddar and mozzarella.
  3. 1/2 small garlic clove, minced
  4. 1 potato very thinly sliced, preferably with a mandolin.
  5. Chopped fresh rosemary or thyme or both, around 1/2 teaspoon
  6. Olive oil
  7. Optional: very thinly sliced red onion, pizza stone.
  1. Preheat oven. We cook this pizza on a very hot preheated pizza stone, in a 500F oven. A baking sheet can be used at a lower temperature if you don't have a pizza stone.
  2. Slice potatoes directly into cold water and let sit for a minimum of 10 minutes to remove starch.
  3. Place on a plate with damp paper towel and microwave for 2-3 minutes.
  4. Spread garlic over pizza base.
  5. Top with cheese.
  6. Layer cooked, sliced potatoes over the cheese and brush with olive oil.
  7. Sprinkle with herbs.
  8. Place a few slices of red onion if desired.
  9. Season and cook until potatoes are golden and base is cooked
