Breakfast yogurt and fruit cups with toasted nut base

A great make-ahead base for an easy breakfast. For busy families, they can be topped quickly in the morning with yogurt and fruit, for a healthy and kid friendly breakfast. The nutty, crunchy base compliments the yogurt well and can be individualized for picky kids with any fruit they choose! A healthy alternative to cheesecake – for breakfast!

Breakfast yogurt and fruit cups with toasted nut base

A great make-ahead base for an easy breakfast. A healthy alternative to cheesecake - for breakfast!

Ingredients

  • 1 cup mixed nuts such as walnuts, almonds and cashews
  • ¼ cup raw pumpkin seeds
  • 2 tablespoons chia seeds
  • 2 tablespoons of sugar
  • 1 tablespoon sesame seeds
  • ¼ cup melted coconut oil
  • Yogurt and fruit of choice.

Instructions

  • Preheat oven to 350F
  • Pulse nuts and seeds in a blender until chopped. Place nut mix in a large bowl and add the chia seeds, sugar, sesame seeds and coconut oil. Mix until well combined. Divide the mix by placing 1/3cup into oven proof ramekins. Press down the mix in each ramekin (a small bowl or ramekin can be useful here). Bake in the oven for 25 minutes or until golden. Chill the bases.(it can be useful to make the bases the night before, and top in the morning for a quick, delicious and healthy breakfast).
  • Top with yogurt then fruit of choice. Serve immediately.
