Ingredients
Pakora
2cupschickpea/garbanzo bean flour
2teaspoonskosher salt
1tablespoonground coriander
1teaspoonground cumin
1teaspoonground turmeric
1large onionhalved and thinly sliced
3/4of a pound of cooked potato cut in 1/4 cubes
optional: cilantro
melted butter for brushing your waffle iron
Dipping Sauce
1/4cuprice wine vinegar
4tablespoonssugar
1teaspoonwhole dried chilisground
Instructions
Add all the dipping sauce ingredients to a small pan with 2 tablespoons of water. Gently bring to the boil, stirring. Boil for around 5 minutes until slightly reduced. Chill.
Parboil potato in boiling water until cooked but not mushy.
Mix garbanzo flour with spices, optional cilantro and 1 cup room temperature or warm water. Add onion and potato.
Heat your waffle iron to its highest temperature. When it's hot add a generous scoop of the pakora batter and fry until crispy and golden.
